Chocolate Chip Zucchini Bread
Zucchini bread, particularly when it’s studded with chocolate chips, is definitely the sweetest way to eat your veggies.

Chocolate Chip Zucchini Bread
Ingredients
Flax egg
- 3 tbsp ground flax
- 8 tbsp warm water
Remaining ingredients
- 1 cup brown sugar
- 1 cup vegetable oil
- 2 tsp vanilla
- 2 cups grated zucchini
- 1 cup walnuts
- 1 cup dairy-free chocolate chips we use semi-sweet
- 3 cups all purpose flour
- 1/2 tsp baking powder
- 1 tsp salt
- 1/2 tsp cinnamon
- 1/2 tsp nutmeg
Instructions
- Mix flax egg ingredients and let sit for a few minutes.
- Preheat oven at 350 °F
- Line 2 9 by 5-inch loaf pans with parchment paper.
- In a large bowl, mix flax egg.
- Beat flax eggs, brown sugar and oil until well combined. Stir in vanilla, zucchini, nuts and chocolate chips. Then add flour, baking powder, salt, spices, baking soda and baking powder mixing batter until it is just combined. Pour equal amount of batter into prepared loaf pans.
- Bake for 40-45 minutes or until a skewer inserted in the middle comes out clean. Let rest for 5-10 minutes then remove loaves from pans and cool.Bon appétit!
Recipe Notes – Chocolate Chip Zucchini Bread
- Zucchini: Overgrown, monster zucchinis that weigh as much as my toddler, are excellent candidates for baked goods, like breads or muffins. Once shredded, they make for the most delicious and divine crumb.
- Chocolate Chips: Dairy-free chocolate chips are so easy to find these days, some brands we use regularly are: Camino, Great Value, Selection, and Laura Secord.
