Method
For the sweet potatoes
- Heat oil in a large saucepan over medium heat. Add the grated sweet potatoes and cook, stirring occasionally, until they begin to soften, about 2-3 minutes. Add spices, bbq sauce, soy sauce, vinegar, salt, pepper and liquid smoke and cook for an additional 10 minutes, stirring occasionally.
For the 'slaw'
- In a mixing bowl, combine all ingredients
Top toasted bun or bread with arugula, slaw and sweet potato.
