1 tsp soy saucetamari can be substituted
liquid smokeoptional and use sparingly

bun or bread of choicelightly toasted
arugula
Quick Coleslaw
1carrotthinly sliced or shredded
2stalkscelery
2cupscabbage shredded
3green onionsfinely chopped
1tspcelery seed
3tbpswhite wine vinegar
1tbpsolive oil
salt and pepper
Instructions
For the sweet potatoes
Heat oil in a large saucepan over medium heat. Add the grated sweet potatoes and cook, stirring occasionally, until they begin to soften, about 2-3 minutes. Add spices, bbq sauce, soy sauce, vinegar, salt, pepper and liquid smoke and cook for an additional 10 minutes, stirring occasionally.
For the 'slaw'
In a mixing bowl, combine all ingredients
Top toasted bun or bread with arugula, slaw and sweet potato.
