BBQ Sweet Potato Sandwich With Slaw

Who knew sweet potatoes could be this delicious? This BBQ Sweet Potato Sandwich is yummy, hearty comfort food made with simple ingredients you likely have on hand.

BBQ Pulled Sweet Potato Sandwich with Slaw

Prep Time 20 minutes
Servings 4

Ingredients
  

Pulled Sweet Potato

  • 3 sweet potatoes grated (use box grater or food processor)
  • 2 tbps olive oil
  • 1/2 c bbq sauce add extra to taste (up to 3/4 cup)
  • 1/2 tsp hot sauce to taste
  • 2 tsp white wine vinegar apple cider vinegar can be substituted
  • 1/2 tsp cumin
  • 1/2 tsp oregano
  • 1/2 tsp red pepper flakes
  • 1 tsp paprika
  • 1 tsp coriander
  • 1 tsp soy sauce tamari can be substituted
  • liquid smoke optional and use sparingly
  • salt and pepper to taste
  • bun or bread of choice lightly toasted
  • arugula

Quick Coleslaw

  • 1 carrot thinly sliced or shredded
  • 2 stalks celery
  • 2 cups cabbage shredded
  • 3 green onions finely chopped
  • 1 tsp celery seed
  • 3 tbps white wine vinegar
  • 1 tbps olive oil
  • salt and pepper

Instructions
 

For the sweet potatoes

  • Heat oil in a large saucepan over medium heat. Add the grated sweet potatoes and cook, stirring occasionally, until they begin to soften, about 2-3 minutes.
    Add spices, bbq sauce, soy sauce, vinegar, salt, pepper and liquid smoke and cook for an additional 10 minutes, stirring occasionally.

For the 'slaw'

  • In a mixing bowl, combine all ingredients

Top toasted bun or bread with arugula, slaw and sweet potato.

    Not a huge fan on sweet potatoes? No problem! This recipe is a game changer. If you ask me, sweet potatoes belong in burgers!

    The natural sweetness of sweet potatoes, the tanginess of barbeque sauce plus the crunch of the slaw make this one delicious sandwich!

    Don’t be alarmed by the long list of ingredients – you really could just make this with sweet potatoes, your favourite BBQ sauce, salt, peper and a bun. In terms of BBQ sauce, I suggest a tangy sauce with a classic barbecue flavor to balance out the sweetness of the sweet potatoes.

    Adding spices and seasoning further deepens the flavour, we like to ‘layer our flavours’ so to speak. The slaw recipe in this post is vinegar based, but nothing is stopping you from using a creamy, mayonnaise based coleslaw.
