Mini Banana Breakfast Loaves
These cute mini banana breakfast loaves are our go-to when we have over-ripe bananas that have overstayed their welcome in our fruit basket. We often make these on Saturday or Sunday morning, as there’s very little prep; this batter comes together is 10 minutes. Feel free to toss in some chopped walnuts or sneak in some dark chocolate chips!
Mini Banana Breakfast Loaves
Ingredients
- 2-3 ripe bananas mashed
- 1/3 cup brown sugar
- 2 tbsp ground flax seed
- 1/2 cup oat milk
- 1/3 cup plant-butter
- 1 tsp vanilla
- 1 cup flour all-purpose
- 3/4 cup oats
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp cinnamon
- 1 pinch nutmeg
- 1/2 tsp salt
- walnuts and chocolate chips optional
Instructions
- Preheat oven to 375°F
- In a large bowl, mix together the mashed bananas, sugar, ground flaxseed, oat milk, plant-butter, and vanilla.Add in the flour, oats, baking powder, baking soda, spices and salt and gently combine.Feel free to add in about 1/2 cup walnuts or sneak in the same amount of dairy-free chocolate chips. Divide into a mini loaf pan. Sprinkle with oats or chocolate chips for a bakery-style look. Bake for 20 minutes until a toothpick inserted into the center comes out clean. Allow to cool for a few minutes then transfer to a wire rack.Bon appétit!
