Mini Banana Breakfast Loaves

Ingredients
  

  • 2-3 ripe bananas mashed
  • 1/3 cup brown sugar
  • 2 tbsp ground flax seed
  • 1/2 cup oat milk
  • 1/3 cup plant-butter
  • 1 tsp vanilla
  • 1 cup flour all-purpose
  • 3/4 cup oats
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1 pinch nutmeg
  • 1/2 tsp salt
  • walnuts and chocolate chips optional

Instructions
 

  • Preheat oven to 375°F
  • In a large bowl, mix together the mashed bananas, sugar, ground flaxseed, oat milk, plant-butter, and vanilla.
    Add in the flour, oats, baking powder, baking soda, spices and salt and gently combine.
    Feel free to add in about 1/2 cup walnuts or sneak in the same amount of dairy-free chocolate chips.
    Divide into a mini loaf pan. Sprinkle with oats or chocolate chips for a bakery-style look.
    Bake for 20 minutes until a toothpick inserted into the center comes out clean.
    Allow to cool for a few minutes then transfer to a wire rack.
