Rustic Apple Hand Pies

Ingredients
  

Pastry Crust
  • 2 1/4 cup flour
  • 1 tbsp sugar
  • 3/4 cup plant-butter chilled
  • 1/2 cup ice water
Apple Filling
  • 2 large apples cut into 1/2 inch chunks
  • 1/2 tbsp lemon juice fresh squeezed
  • 2 tbsp maple syrup
  • 1 tbsp brown sugar
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 1 tiny pinch cloves

Method
 

  1. Preheat oven to 450
Apple Filling
  1. Combine apples, maple syrup, brown sugar, cinnamon, nutmeg, cloves and salt together in a medium saucepan or skillet over low-medium heat. While occasionally stirring, bring to a simmer. Allow to simmer for 2 minutes. Finish with lemon juice
Pastry Crust
  1. Add flour, sugar, and salt to a bowl and mix well. Add chilled, cubed plant-butter and combine with a pastry cutter until crumbly. Add 4-6 tablespoons of cold water, as needed, to bring the dough together into a solid ball.
Assemble
  1. Roll out dough.
    Cut into smaller squares/rectangles (we ended up with 5).
    Spoon filling over 1/2 of the square and fold dough over filling.
    Place on a baking sheet.
    Bake until golden brown, about 18-20 minutes.
