Combine apples, maple syrup, brown sugar, cinnamon, nutmeg, cloves and salt together in a medium saucepan or skillet over low-medium heat. While occasionally stirring, bring to a simmer. Allow to simmer for 2 minutes. Finish with lemon juice
Pastry Crust
Add flour, sugar, and salt to a bowl and mix well. Add chilled, cubed plant-butter and combine with a pastry cutter until crumbly. Add 4-6 tablespoons of cold water, as needed, to bring the dough together into a solid ball.
Assemble
Roll out dough.Cut into smaller squares/rectangles (we ended up with 5).Spoon filling over 1/2 of the square and fold dough over filling.Place on a baking sheet.Bake until golden brown, about 18-20 minutes.Enjoy!
