Lentil Potato Soup

Ingredients
  

Lentil Soup

  • 2 tbsp olive oil
  • 1 medium onion chopped
  • 2 medium carrots peeled and chopped
  • 2 celery stalks chopped
  • 2 medium potatoes peeled and chopped
  • 3 cloves garlic finely diced
  • 1 tsp coriander
  • 1 tsp cumin
  • 1 1/2 tsp salt
  • 1/2 tsp paprika
  • 1/2 tsp oregano
  • 1/2 tsp thyme
  • 1/4 tsp red pepper flakes
  • 2 cups dried brown lentils well-rinsed
  • 5 cups water
  • 2 tbsp lemon juice
  • 1 tbsp white wine vinegar
  • 1 bay leaf

Instructions
 

  • Heat oil in a large pot over medium heat. Add onion, celery, and carrots and cook them until they’re soft, fragrant, and translucent. Add potato and sauté for a few minutes, then add garlic and spices. Sauté then add salt, lentils and water.
  • Simmer, stirring occasionally, until lentils become soft, about 15-20 minutes. Add lemon juice and vinegar, taste and adjust seasoning, add more salt if required.
    Serve with biscuits and top with fresh cilantro.
