Method
Tofu 'fillets'
- In a large cast iron skillet, heat oil over medium-high heat. Add tofu, season with coriander, salt and pepper and cook until browned and crispy on all sides. Remove from pan and set aside on a paper towel lined plate.
Hummus caesar dressing
- Combine all ingredients in a medium sized measuring cup, whisking well until well combined. If the mixture is too thick, add a little water. Taste and adjust flavour as needed.
Wrap it up!
- Place tofu, toppings and dressing on tortilla and roll up tightly. Return to pan to grill until lightly browned. Bon appétit!
