Crispy Tofu Caesar Wrap

Ingredients
  

For the tofu
  • 1 block medium firm tofu sliced into fillets
  • 1 tsp coriander
  • salt and pepper to taste
Hummus caesar dressing
  • 1/2 cup hummus store bought or homemade
  • 1 tbsp dijon mustard
  • 1 tsp capers finely diced
  • 1 tsp brining juice from capers
  • 2 cloves garlic minced
  • 1/2 tsp salt
  • 2 tbsp olive oil
  • 1 tsp maple syrup or sugar
  • juice from 1/2 a lemon
All the fixing's
  • 2 flour tortilla wraps
  • romaine lettuce shredded
  • tomato sliced
  • avocado sliced

Method
 

Tofu 'fillets'
  1. In a large cast iron skillet, heat oil over medium-high heat. Add tofu, season with coriander, salt and pepper and cook until browned and crispy on all sides. Remove from pan and set aside on a paper towel lined plate.
Hummus caesar dressing
  1. Combine all ingredients in a medium sized measuring cup, whisking well until well combined. If the mixture is too thick, add a little water. Taste and adjust flavour as needed.
Wrap it up!
  1. Place tofu, toppings and dressing on tortilla and roll up tightly. Return to pan to grill until lightly browned.
