Crispy Tofu Caesar Wrap

Ingredients
  

For the tofu

  • 1 block medium firm tofu sliced into fillets
  • 1 tsp coriander
  • salt and pepper to taste

Hummus caesar dressing

  • 1/2 cup hummus store bought or homemade
  • 1 tbsp dijon mustard
  • 1 tsp capers finely diced
  • 1 tsp brining juice from capers
  • 2 cloves garlic minced
  • 1/2 tsp salt
  • 2 tbsp olive oil
  • 1 tsp maple syrup or sugar
  • juice from 1/2 a lemon

All the fixing's

  • 2 flour tortilla wraps
  • romaine lettuce shredded
  • tomato sliced
  • avocado sliced

Instructions
 

Tofu 'fillets'

  • In a large cast iron skillet, heat oil over medium-high heat. Add tofu, season with coriander, salt and pepper and cook until browned and crispy on all sides. Remove from pan and set aside on a paper towel lined plate.

Hummus caesar dressing

  • Combine all ingredients in a medium sized measuring cup, whisking well until well combined. If the mixture is too thick, add a little water. Taste and adjust flavour as needed.

Wrap it up!

  • Place tofu, toppings and dressing on tortilla and roll up tightly. Return to pan to grill until lightly browned.
