Creamy Miso Pasta

Ingredients
  

  • 1 410 grams linguine
  • 5 tbsp plant based butter
  • 5 tbsp light white miso
  • 1 cup vegan parmesan recipe follows
Vegan Parmesan
  • 3/4 cup slivered almonds
  • 3 tbsp nutritional yeast
  • 1 tsp salt
  • 1/4 tsp garlic powder
Optional: Salt and Pepper Tofu
  • 1 block medium firm tofu
  • 3 tbsp cooking oil
  • salt & pepper

Method
 

Vegan Parmesan
  1. Add all ingredients to a blender or food processor and pulse until a fine meal (similar to traditional cow parmesan) is achieved.
Pasta
  1. Prepare pasta according to package instructions.
    RESERVE 2 CUPS OF PASTA WATER
  2. Add plant-based butter, miso and pasta water to a pot and whisk over medium heat until well combined. Add the pasta and parmesan and stir until the sauce becomes silky smooth and creamy.
Optional Salt & Pepper Tofu
  1. Stir-fry tofu. Heat a wok or large skillet over medium-high heat. Add cooking oil. Fry until tofu is browned and crispy, then remove from pan.
Top miso pasta with salt and pepper tofu and serve. Bon appétit!
