Grandma’s Soft Ginger Cookies

Grandma’s soft ginger cookies- To be enjoyed with a glass of eggnog (the fun kind).
Festive and perfectly spiced, these gingerbread cookies have a tender and cakey texture, complete with slightly crispy edges.
What Makes These Cookies Special?
This recipe was slightly adapted from my husbands’ grandmothers recipe. These ginger cookies are incredibly soft and chewy, with just the right amount of spice. Molasses gives them a deep, rich flavor, while cinnamon and ginger provide a cozy warmth. A tiny pinch of salt rounds everything out, making these cookies perfect for pairing with a cup of tea, eggnog or hot cocoa.
Grandma’s Soft Ginger Cookies
Ingredients
- 2/3 cups canola oil
- 1 cup white sugar
- 1/4 cup molasses
- 2 flax eggs 2 tbsp flax and 5 tbsp hot water
- 2 cups flour
- 2 tsp baking soda
- 1/2 tsp salt
- 1 tsp ginger
- 1 tsp cinnamon
Instructions
Mix oil and sugar until well combined. Add molasses and stir until thoroughly combined. Add flax egg. Add dry ingredients and stir. Batter will be stiff. Take 1 tablespoon of dough and roll into ball. Roll dough balls in white sugar until coated. Place on cookie sheet and press down with fork. Bake 350 for 9 minutes. Let cool 5 minutes.
