Crumb Cake
Delightful with coffee or tea, (or wine if it’s an after dinner dessert) this moist crumb cake has lots of crisp, salty, buttery crumbs on top. The cake tastes like is a traditional, moist sour cream coffee cake, hold the cream, and replace with some hearty plant-based greek yogurt.

Ingredients
Cake
- 1 3/4 cup flour
- 1/3 cup sugar
- 2 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup plant milk oat or soy will work best
- 1 tbsp plant-based plain greek yogurt
- 1 tsp apple cider vinegar
- 1/4 cup vegetable oil
- 1 tsp vanilla
Streusel
- 1/2 cup flour
- 1/3 cup brown sugar
- 1/2 tsp salt
- 1 tsp cinnamon
- 1 pinch nutmeg and cloves
- 3 tbsp plant-based butter
Instructions
- Preheat oven to 350.
- Oil and flour a 8 x 8 pan.
- In a bowl, mix dry ingredients (flour through salt).
- In another bowl, mix wet ingredients (plant-milk through vanilla).
- Fold the wet and dry ingredients until just combined and pour into cake pan.
- In a small bowl, mix dry streusel ingredients. Add the plant-butter and mix until crumbly. Spread over cake batter.
- Bake for 35 minutes. Enjoy!
