Cowboy Scramble
Fluffy, rich, and flavorful, this perfect Cowboy Scramble makes for a satisfying breakfast or brunch to feed hard-working cowboys!
The hearty, savoury mix of potatoes, peppers, carrots and onion tofu scramble is topped with avocados and a tangy cashew cheese sauce. A dash of hot sauce is a great way to punch up Nixon Farm’s Cowboy Scramble. Serve on it’s own, in a wrap, on an English muffin or on multigrain bagel, like we did today.
Cowboy Scramble
Calling all hungry cowboys! This hearty tofu scramble is exactly what you need.
Ingredients
- 2 small potatoes chopped
- 1 onion diced
- 3 cloves garlic minced
- 2-3 tbsp olive oil
- 1 carrot chopped
- 1 350g tofu we used medium-firm
- 2 tbsp soy sauce
- 1/2 lemon juiced
- 1/4 cup nutritional yeast
- 1 tsp coriander
- 1 tsp basil
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp chili powder
- 1/4 tsp turmeric just for colour, really.
- salt and pepper
- avocado sliced
Cashew Cheese
- 1 cup raw cashews
- 3 tbsp nutritional yeast
- 1/2 lemon juiced
- 1 tsp apple cider vinegar
- 1/4 tsp garlic powder
- 1/2 tsp salt
- fresh ground pepper
- 1/4 cup water add a little bit at a time and adjust as needed.
Spicy Mayo
- 3 tbsp mayonaise we use plant-based (FarmBoy, store brand, Hellmans and Vegenaise all work)
- 1 tbsp hot sauce to taste
Instructions
Cowboy Scramble
- Chop potatoes into small, bite-sized pieces. Chop carrots, onion and garlic.
- Heat oil in large cast iron skillet over medium heat. Add potatoes and onions and cook until potatoes soften. If the potatoes begin to stick to the skillet, add a splash or two of water. Add the carrots and garlic and cook until tender.
- Crumble the tofu into the skillet with your hands and sauté for a few minutes. Add soy sauce and spices (coriander, basil, cumin, chilli powder, paprika). Let it cook for a few minutes, then add the lemon juice and nooch (nutritional yeast). Let cook for a few more minutes to allow the flavours to combine.
Cashew Cheese
- Place the cashews, nutritional yeast, lemon juice, vinegar garlic powder, salt, and pepper in a high powered blender. Pulse repeatedly to break the cashews down, until they form a coarse, wet meal. Scrape the sides with a spatula as needed. Add in the water, a little at a time, until desired consistency is achieved. Taste adjust seasonings as needed.
Spicy Mayo
- Combine mayonnaise and hot sauce is a small side dish.
Assemble
- Toast bagel (if using) and spread spicy mayo on both halves. Add a generous amount of cashew cheese. Add scramble and top with sliced avocado. Bon appétit!
