Creamy Garlic Pasta With Spicy Tofu
Ingredients
Garlic Cream Sauce
- 410 grams fettuccine
- 1 cup sliced almonds
- 2 lemons juiced
- 2 tbsp olive oil
- 1 onion dices
- 4 cloves garlic finely chopped
- 1/4 cup nutritional yeast
- salt and pepper
- 2 cups pasta water
Spicy Tofu
- 454 gram tofu, cut into 1/2 inch cubes one package
- 2 tbsp vegetable oil for frying the tofu
- 3 tbps soy sauce
- 1 tbsp hot sauce we used Frank's Red Hot
- 2 tsp maple syrup
- 1 pinch garlic salt
Instructions
Garlic Cream Sauce
- Cook pasta of choice per package instructions.
- Sauté onions until lightly browned, then add garlic and cook for 30 seconds to 1 minute, until just fragrant.
- Toss sauteed onions and garlic, almonds, lemon juice, nutritional yeast and salt and pepper into a high speed blender. Stream in reserved pasta water until desired consistency is achieved.
- Toss pasta with sauce.
Spicy Tofu
- Heat oil in a cast iron skillet. Add tofu squares and fry until browned on all sides.
- Mix soy sauce, hot sauce, maple syrup and garlic salt in a small container.
- Add sauce to browned tofu, stirring until it thickens and sticks to the tofu.
- Serve pasta with generous scoop of spicy crispy tofu, and enjoy!
