Creamy Garlic Pasta With Spicy Tofu

Ingredients
  

Garlic Cream Sauce

  • 410 grams fettuccine
  • 1 cup sliced almonds
  • 2 lemons juiced
  • 2 tbsp olive oil
  • 1 onion dices
  • 4 cloves garlic finely chopped
  • 1/4 cup nutritional yeast
  • salt and pepper
  • 2 cups pasta water

Spicy Tofu

  • 454 gram tofu, cut into 1/2 inch cubes one package
  • 2 tbsp vegetable oil for frying the tofu
  • 3 tbps soy sauce
  • 1 tbsp hot sauce we used Frank's Red Hot
  • 2 tsp maple syrup
  • 1 pinch garlic salt

Instructions
 

Garlic Cream Sauce

  • Cook pasta of choice per package instructions.
  • Sauté onions until lightly browned, then add garlic and cook for 30 seconds to 1 minute, until just fragrant.
  • Toss sauteed onions and garlic, almonds, lemon juice, nutritional yeast and salt and pepper into a high speed blender. Stream in reserved pasta water until desired consistency is achieved.
  • Toss pasta with sauce.

Spicy Tofu

  • Heat oil in a cast iron skillet. Add tofu squares and fry until browned on all sides.
  • Mix soy sauce, hot sauce, maple syrup and garlic salt in a small container.
  • Add sauce to browned tofu, stirring until it thickens and sticks to the tofu.
  • Serve pasta with generous scoop of spicy crispy tofu, and enjoy!
