The Scene: It’s 2020. In the midst of a worldwide pandemic.
We could have just made another loaf of banana bread.
But oh no. We went the more expensive route….
And made a baby.
At Nixon Farm, we achieved The Pandemic Triple Crown: Air fryer. Puppy. Baby.
Current status: Air fryer is broken, puppy is a ******* maniac and we have have perfected this recipe.
… and our hearts our overflowing with love for our sweet baby.
Banana Bread
Ingredients
- 2 bananas (ripe) mashed
- 1 cup plant milk cashew, almond or oat
- ½ cup vegetable or canola oil
- 2 tsp apple cider vinegar
- 1 tsp vanilla
- 1 cup brown sugar
- ½ tsp cinnamon
- 2 cups flour
- ¼ tsp nutmeg
- ¼ tsp ginger
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 1¼ cup chocolate chips
Instructions
- Preheat oven at 350°Grease or line a loaf pan with parchment paper (we use parchment paper)Mix mashed bananas, plant-based milk, oil,vinegar, vanilla and brown sugar.Add in four, spices, baking powder, baking soda and salt. Fold in chocolate chips.Bake for 60-70 minutes.

Do you like a little banana bread with your chocolate chips?
Around here, there is no such thing as too many chocolate chips. Complaining about chocolate is like whining that there are too many puppies to play with. Or the kittens are just too cute and too fluffy.
- Dairy-free chocolate chips are relatively easy to find. President’s Choice Semi-Sweet Chocolate Chips are dairy free, and PC also has chocolate chips that are expressly plant-based. If you find yourself in a pinch, i.e. you have ripe bananas and someone has been sneaking chocolate chips by the fistful, you could make this recipe with as little as 1/2 cup of chocolate chips.
- Plant-based milk is available just about everywhere. Walmart, our tiny little rural grocery store, corner stores and the dépaneur sell it. We usually buy cashew, almond or oat. Coconut, macadamia milk may work, I just haven’t tested this recipe with it. If you ever test this recipe using soy milk, let me know how it goes, and I will pass along your results!
