Nutritious AND Delicious!
Lentils, mushrooms and walnuts make these plant-based Sloppy Joe’s super hearty, and provide a meaty texture.
Did you know that Canada produces the most of this legume, in the world? Gram for gram, lentils are more nutritious than cows; they contain more protein and have less fat. They are high in vitamin B, and also provide 90% of our daily recommended intake of folate and 37% of the DRI of iron! (Source: Label on a can of lentils in my pantry 🙂
Whether you use meat or plants, as long as you achieve the right seasoning, the outcome is ultimately quite similar – a sweet, tangy and savory mix that you serve on a bun. It’s messy. It’s sloppy. Bring a fork!
Need any further evidence to support just how incredibly easy these Sloppy Joe’s are to make?! One skillet or saucepan, a few key ingredients and that’s it! The real secret is simply adjusting the seasoning for the sauce because mushrooms and lentils will take on the flavour of whatever you add to the dish!
Sloppy Joe’s Ingredient Tips
These Sloppy Joe’s are made with easy-to-find, healthy ingredients. Here’s what you’ll need:
- Lentils: Canned or dried will work. Canned lentils need to be drained and thoroughly rinsed. If using dried lentils, the recipe will take a bit more time to prepare. Follow package directions if using dried lentils.
- Mushrooms: Cremini mushrooms work best, they have a heartier, umami taste, but white mushrooms will do in a pinch.
- Walnuts: Hot tip: Always buy nuts in the baking section of the grocery store! The selection in the nut-trail mix-dried fruit section of the store almost always cost two or three times more.
- Spices and seasoning: Mushrooms and lentils are ‘flavor absorbers’ and take on the flavour of the spices and seasoning added to it. Like it spicy? Add more hot sauce. Need it kid-friendly? Skip the hot sauce and add a little extra ketchup!
